What is a Grips / Bar Tape?
The cushioning your hands actually rest on.

Grips (flat bars) or bar tape (drop bars) wrap the handlebar to cushion your hands and improve control, especially over rough surfaces.
A simple analogy

How it works
A layer of rubber, foam or cork sits between your palms and the bare metal bar, absorbing vibration and improving friction so your hands don't slide.
